OK.
maybe hate is too strong of a word.
Maybe it is the wrong word entirely.
Maybe it should be You know who am supremely jealous of and desperately want to be like?
Maybe.
But I am not admitting it on here!
I hate people who always know what to make for supper. I hate those of you who think to take out something so it is defrosted in time, and I especially hate those of you who can think up a great meal in under a minute!
*sticks out tongue*
Oh and also? Anyone want to shoot me a line right now with an idea for supper?
Please?
I promise to love you forever and ever and call you bob!

Sorry I didn't read this in time to bail you out!
The secret is - not so much having a brilliant quick idea for what to have for supper, but having a couple of clever stand-by menus -- "faking it" in fact.
I'm all in favour of keeping some cooked meat in the freezer, for those days when you forget all about having to actually put a meal on the table... until it's much too late to do the meal prep in any conventional manner.
Pull out the pre-cooked chunk o' pork roast or the leftover chicken breast, slap some sauce of some sort onto it (it comes in jars and cans for a reason!) and heat gently in the microwave while you hurry-up cook some rice/pasta/potatoes and veg...
Can't tell you how many times I've done that - it just takes about half an hour or less (as long as the rice takes, really) and ends up looking like you slaved over a hot stove for half the afternoon. Score!
My old fav is french toast.
